Home Made Baked Beans

I have been wanting to make this home made Baked Beans recipe from The Petite Kitchen for ages but it was just a matter of putting the beans and the thyme on the grocery list.  I will now have to make sure I grow some thyme as we will be making this regularly.  It is so easy and tastes amazing and as Jennifer says "once you make your own you'll never go back to buying store bought" and I would have to agree.  The kids have given it the thumbs up and can't wait to have it tonight for dinner (yes, we do baked beans as a quick meal in our household).  There will be homemade toasted Turkish Bread to go with it and the kids are pretty keen for tonight's dinner.

It's as simple as chopping the onion and garlic and popping it into a pan or saucepan with butter and then once they are soft add all the other ingredients like beans, tomato paste, chicken stock, thyme and salt and pepper and bring it to the boil and then reduce the heat for 30-35 minutes and it's as simple as that and you are done.

One thing I did while it was cooking was to add a second can of beans as there was heaps of sauce even after it was reducing so basically doing a double batch without the extra liquid.  The smell was inviting and we are big fans.

BAKED BEANS RECIPE

25gms butter
1 brown onion finely diced
4 garlic cloves chopped finely
4 cups of chicken stock [or vegetable stock]
4 cans of cannellini beans
a handful of fresh thyme roughly chopped
200gms of tomato paste
1 teaspoon of salt
1 teaspoon of pepper

I did have two slices of Turkish Bread however I took a photo with my iphone and then the kids started eating the Turkish Bread before I got my DSLR ready so that's why there is a very small bit of Turkish Bread in the bottom photo.  You have to be quick around these parts.

  2. Hi Kathy,,
A few blogs ago you recommended that book The Homemade Pantry, it sounded interesting so I ordered it online. I received it today and it looks very interesting. American quantities, but they're easily changed; I'm sure I will enjoy making some of them. Thanks for the idea, Melindi

  3. A really healthy alternative and much prettier than the tinned ones - once you clock how much sugar is in a tin of baked beans, there is no looking back!

  4. Thanks for letting me know you ordered the book Melindi...........it's fantastic and I love her story about her wedding feeding all those people for about $300. I actually write in my favourite cookbooks so where it has the USA temps etc. I just write Aussie temps next to it. Also another big tip is say you are making bread but there is rising involved etc. I work out from start to finish reading the instructions how long is needed and say put 2 and half hours or 4 and a half hrs from start to finish so if I want to make it for lunch...I just work backwards. It's handy and reminds me I need to start earlier in the day depending upon what I'm making. You'll enjoy the book. The pizza dough is great but plan that the day before as it's mix ingredients which takes about 5 mins and leave for 24 hrs. This year I've decided to make that Thursday night so we can have pizza on Friday night. Of course there are pizza dough recipes that only need an hour or two to prove but the 24 hr one is nice. Enjoy the book. Regards Kathy A, Brisbane, Australia

  6. We had homemade baked beans last night for dinner. They are so delicious and full of plant protein. I usually make a double batch, and freeze some for a quick and easy dinner the following week. I use worcestershire sauce in mine for a little "zing".
