How is everyone doing at the moment as restrictions are starting to ease a little. I certainly won't be going to any big shopping centres for a while and in fact, I hardly go there anyway as I'm not a big shopper-spender. Queensland schools will all be back next Monday and I've noticed there are a lot more cars on the road lately. We are still being very careful and social distancing as whilst we have done an amazing job to stop the spread it's not gone from our lives so we have to be very careful at all times.
I've made these cup cakes today and if you haven't made this recipe I recommend you do as the cakes are so soft and yummy. You crack 2 eggs into a 1 cup measuring cup and top it with cream to the top. Beat those for 3-5 minutes add the sugar beat again and then fold the flour so easy and delicious and it's my "go to cupcake" recipe. In the post I've linked it says a cup of cream, it's probably about 1/4 cup and I just used the left over cream we had in the fridge.

I loved this post from Frogdancer about having an Emergency Fund and her blog post about her "no spend" days and how she records it like a game or a challenge. I love spreadsheets to this one appealed to me on so many levels. I love reading her blog posts and I take my hat off to her as she had 4 boys under 5 and $60 cash to her name after she split from her husband. That takes a lot of guts and 20+ years or so later she is still thriving.

Kathy, I really must get back into doing my exercise as I am putting on weight. I do visit our major shopping centre but only at the beginning of the week when it is quiet and never at the weekend. I often walk from one end to the other to get some exercise as I am paranoid about walking in the sun due to having had too many skin cancers. Some yummy food there.

DeleteI just picked the last pumpkin that we got off a volunteer vine that grew in our garden. It's small but making a dip with some roasted pumpkin sounds delicious and a good use for it. I love roasted pumpkin! MegXx

ReplyDeleteI am trying to get back into exercise too! I’m a homebody normally, but this lockdown saw me baking more than usual and the kilo’s have crept on! I’m ‘trying’ to do a 5klm walk at least three times a week...this is only my first week and I’ve been twice, I’ll see what next week brings before I start patting myself on the back 😂
ha ha....we are always enthusiastic in the first week. I'm doing an 8 week challenge with Sam Wood and it's just the normal program just an extra incentive to get motivated with a $10K prize at the end. Only one person can win the prize however it's the concentrated effort of 8 weeks that is the winner because it's the consistency and effort that sees results.
DeleteOur area of NY State has just started their phase 1 of reopening. I am with you, not that I'm a shopper but I certainly have no interest in going to a large shopping center any time soon. For the most part people are being respectful of the COVID related changes but we certainly have handfuls who refuse to social distance or wear masks. I just don't get it - it doesn't seem like it's too much to ask. Thank you for the links, especially the sourdough one. I've been having fun experimenting with different sourdough recipes so I'm excited to explore that site. Sienna must have inherited some of your baking skills - looks like she makes some delicious things! And what a wonderful breakfast from James! Lettuce is (finally) starting to come up in our garden. I can't wait!!
